This easy frittata is one of our favorite egg recipes!
Ingredients:
* 6 large eggs, use 8 eggs for a 12-inch skillet
* ¼ cup milk
* 2 garlic cloves, minced
* ¼ teaspoon sea salt, plus more for sprinkling
* Freshly ground black pepper
* 1 tablespoon extra-virgin olive oil
* 6 scallions, chopped
* 2 cups chopped broccoli or broccolini
* ⅛ teaspoon smoked paprika
* ¼ cup crumbled feta cheese
Instructions:
1. Preheat the oven to 400°F.
2. In a large bowl, whisk together the eggs, milk, garlic, salt, and several grinds of pepper. Set aside.
3. Heat the olive oil in a 10 or 12-inch cast-iron skillet over medium heat. Add the scallions, broccoli, and a pinch of salt and pepper and cook, stirring occasionally, until the broccoli is tender but still bright green, 5 to 8 minutes.
4. Stir in the smoked paprika, then add the egg mixture and gently shake the pan to distribute.
